Tabasco pepper (Capsicum frutescens) is a chili pepper and displays a vibrant red color when fully ripe with a spicy heat level of 30,000-50,000 SHU. The pepper grows about two inches long and a yellow to orange that eventually ripens to a bright red. Tabasco peppers are about 6-10 times hotter than jalapeno and comparable to cayenne. They grow to be up to 5-6 feet tall and wide and need temps above 75°F during the day and dropping at night to 60-65°F to enrich the flavor. Add this to your food menu and try your hand at making homemade Tabasco sauce!

Tabasco Pepper Hot Sauce

Credit: Mike Hilquist @chilipeppermaddness

You Will Need:

5 ounces tabasco peppers
1/4 teaspoon salt
1 cup white wine vinegar
(Additional water or vinegar for milder spice level)

Directions:

Add the tabasco peppers, vinegar and 1⁄4 teaspoon salt to a small pot.

Bring the mixture to a quick boil, then reduce the heat and simmer for 15 minutes to soften.

Cool slightly, then add to a food processor. Process until smooth. Gorgeous red pepper sauce right there already, much like the Tabasco original red sauce, but brighter in color.

Strain the pepper seeds and pulp mixture to remove the solids. Look at how much of the seeds and pulp remains. You don’t need to seed the peppers first, as we’re straining the hot sauce. Pour into hot sauce bottles and enjoy.
