Oxalis' clover-like leaves react to the dark by folding backward. The mechanics of this movement is due to turgor pressure at the base of the leaf. The nectar-producing flowers can be white, yellow, rose-purple, or pink. Their flowers include both kinds of reproductive organs (perfect flowers). Long ago, sailors at sea would eat oxalis as a good source of Vitamin C to help prevent scurvy. It has a sour taste, from which it derives its name "oxys," meaning "sour" in Greek.
