Kale is a part of the Brassicaceae family, including collard greens, wild cabbage, cauliflower, broccoli, and Brussels sprouts. Kale is a cruciferous vegetable because there are four petals on the flower, and they resemble a Greek cross! If your kale leaves seem a little tough, massage them like you would knead dough. You can also shred it into thin stripes to break down the fibrous tissue to make it more tender to eat.
